"In this edition of our regular series, we get Amanda Tan of specialist Japanese e-grocer Zairyo to give us the low-down on everyone’s favourite ingredient: uni, or Japanese sea urchin."

...you can turn to specialist importers such as Zairyo. The company was set up in 2014 but has been supplying to restaurants in Singapore for 14 years under another name, said its co-founder Amanda Tan. “Also, because we’re not a supermarket, we don’t keep produce in our warehouses waiting for someone to pick them up,” Tan explained. “We only order the item from Japan when someone orders it, so it’s definitely as fresh as you can get.” Most of the seafood sold by Zairyo are brought directly from Tsukiji market and flash-frozen before being flown over to maintain freshness.

"This grocer specialises in anything Japanese. From fresh imported seafood, seasonal vegetables and premium meats to specialty condiments, Zairyo is a one-stop shop for any aspiring home chef that wants to try their hands at creating their own kaiseki or omakase for their family. Of course, there are ready-to-cook options as well, though Zairyo’s coup de maitre is their direct access to the Uni (sea urchin roe) auction which is flown in four times a week normally."
